Asian Leek soup
This Asian Leek soup is one of my favorite soup recipes. It’s refreshing with a combination of mints, coconut milk and cilantro. This soup is perfect for any time when you need some extra love.

How to make Asian Leek soup
In wok heat peanut oil, add sliced leek, tofu, soy sauce, peanut butter, curry sauce and pour over vegetables stock with coconut milk. Bring everything to boil, add rice noodle, then turn heat to lower and let it cooked 15 minutes.
After cooked time add scallions, cilantro, mints on top. Optional, you can use some jalapeรฑos as well. Enjoy!

Ingredients
- 1 tbsp Peanut oil
- 1 medium Scallion
- 1 large ย Leek
- 1 Tofu
- 1 cup Rice noodle
- 1 tbsp Soy sauce
- 500 ml Vegetables stock
- 1 can Coconut milk
- 1 Lemon grass
- 1 tbsp Peanut butter
- 1 tbsp Curry sauce
- Cilantro
- Mints
Optional
- 1/2 cup ย jalapeรฑos
Instructions
