How to make Vegan stuffed cucumber

In a small pan, add one cup of bulgur with two cups of water and pinch of salt. Bring everything to boil then turn heat on medium and let it cooked until all water disappeared around 10 -15 minutes.

Meanwhile, heat a pan with one tbsp olive oil, add sliced onion with garlic and simmer until onion get soft but donโ€™t get brown. Add Vegan hack with fresh thyme and chopped parsley, cooked bulgur season with salt & pepper and let cooked 10 minutes.

Sliced cucumber in half-length ways. You can keep the skin on. Then gently with a spoon empty them, removing the central part with the seeds which are very watery. Put all seeds in a small bowl, add vegan yogurt, garlic, season with salt and pepper and mix well. In each cucumber boat add vegan hack mixture and top with homemade tzatziki dressing. Optional, sprinkle some nuts on top.

  • 2 large Cucumber
  • 1 tbsp Olive oil
  • 1 medium Onion

  • 250 g Vegan hack

  • 1 cup Vegan Yogurt

  • Salt &Pepper
