This simple dish is great for lunch and dinner. It’s easy to make and you will feel healthy and full of energy after it. Secret ingredient is homemade fresh parsley pesto.

Why you should eat more parsley?

Parsley is one of my favorite herb. Firstly, it’s full of vitamin K, vitamin C, vitamin A.
Secondly, you can it easy to digest and help to heal your kidney. Funny fact is that this
herb help to dikriest smell of garlic.
So what you need for Parsley pesto:

  • Olive oil
  • Fresh parsley
  • Pine nut
  • Chili
  • Nutritional yeast
  • Salt and Pepper
Parsley pesto

This recipe is a combination of the best nutrition. However, parsley is the key ingredient, there are the other superfood what we can not forget to mention.  
Firstly, FISH is the main source of omega 3 and why should include it in our daily diet.
Secondly, AVOCADO is loaded with fiber and potassium which helps our overall health.
Finally,
GREEN SALAD help us for example in losing weight.

What fish can you choose?

You can choose other fish in this recipe for instance salmon or mackerel. Salmon is the most popular fish in these days however I like white fish as well.

Ingredients
  

  • 3 cup salat
  • 1 cup cucumber
  • ยฝ avocado
  • 2 fillets cod fish

Parsley pesto

  • 2 tbsp olive oil extra virgin
  • 2 cups fresh parsley
  • ยฝ cup pine nuts
  • ยฝ tbsp chilli flakes
  • 1 tbsp nutritional yeast

Instructions
 

Fish bowl

  • Preheat oven to 180C. Line baking tray with baking paper and place the fish fillets. On the top fish spread salts and pepper and bake for 14 mins.
  • Meanwhile cut salat in small peaces, peel cucumber in long form and cut avodado in small squars

Fresh parsley pesto

  • In your blender add oliven oil, pine nuts, nutritional yeast and mix for 30 seconds
  • Than add fresh parsley, chili flakes salt, pepper and blend one more time
  • Try your pesto and if desire you can add more salt pepper

Design your bowl

  • Design your bowl with salat, cucumber, avocado, backed fish and on top spread fresh parsley pesto
  • Enjoy
