Eggplant – It has just a perfect form from stuffed recipes. I like the color of eggplant and I try to add as many color in my meals as I can, because every beautiful colorful vegetables have a different health benefits for us.
Mushroom โ Mushroom are our meal substance, you can buy any mushroom you like and sliced them in small or used a food processor. Mushroom are great for heart, healthy bones, therefore they help to lower cholesterol levels, improves immunity and somehow aid in weight loss.
Onion – Onion is just stable in my kitchen and for me most of the dishes start with one. It is like starting a morning with a cup of coffee. ๐
Spices and Herbs โ I keep this dish easy you need just Red pepper powder Salt & Pepper and tomato paste
Vegan cheese โ I find this amazing vegan cheese in store and actually this cheese was my inspiration for this dish, because I was looking for something what I can put in oven and let the cheese slowly melt.
Ingredients for golden rice
Golden rice is one of my favorite way to add a little color in rice. This dish is so nutrition from turmeric and creamy from coconut milk. Also, it looks really fancy is you serve your dish with a yellow rice on the side.
Turmeric โ Use turmeric to colored your dish in yellow golden color.
Rice โ I used a combination of white with black rice, but If you can’t buy black rice, don’t worry and use only a white one. Rice is great for us for many reasons, for instance help to control diabetes, prevent obesity, help to boost heart.
Liquid โ For liquids, you need to combine vegetables stock with Coconut milk. Coconut milk make rice taste so tasty and creamy with a light taste of coconut. Coconut milk is antibacterial, rich in antioxidant and is excellent for hydration.

Ingredients
Mushroom stuffed eggplant
- 2 large Eggplant
- 2 cup Mushroom
- 1 large Onion
- 2 tbsp Red pepper powder
- 1 tbsp Tomato paste
- Salt & Pepper
Ingredients for golden rice
- 1/2 cup Rice white
- 1/2 cup Rice black
- 2 tbsp Turmeric
- 1 can Coconut milk
- 200 ml Vegetables stock
- Salt & Pepper
Instructions
Mushroom stuffed eggplant
- Preheat oven to 200 ย ยฐC.
- Sliced onion, mushroom in small. In pan heat oil add onion and simmer for two minutes or till onion soften then add mushroom all spices and tomato paste, mix well and let simmer around 7 minutes.
- Meanwhile, sliced eggplant ย in half and scoop out the center, leaving enough meat inside the skin so that it holds its shape Rest of the eggplant add on the pan and let cook with allingredients.
- Spread a little olive oil on the eggplant andthen add the mushroom mixture in the middle. Let baked for 20 minutes.
- Add vegan cheese on top and let baked 10 more minutes.
Golden rice
- In a small pan add rice with coconut milk, vegetables stock, turmeric and salt. Bring everything to boil then turn heat on medium and let cooked 10 minutes after turn the heat off and let cooked 10 more minutes tillall the liquid disappear.
- Enjoy stuffed eggplant with golden rice.
