Ingredients
  

  • 2 cups whole grain pasta
  • 2 cups fresh spinach
  • 1 cup fresh basil
  • 2 cloves garlic
  • 1/2 cup cashews
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 can chickpeas

Instructions
 

  • Cook the whole grain pasta according to package instructions. Make sure not to overcook it, as we want it al dente.
  • While the pasta is cooking, letโ€˜s prepare the green sauce. In a blender, add the fresh spinach, basil, garlic, cashews, nutritional yeast, and olive oil.
  • Blend these ingredients until smooth. You might need to scrape down the sides of the blender a few times to ensure everything gets blended properly.
  • Now, letโ€˜s prepare the protein. In a pan, sautรฉ your chosen protein source (like chickpeas or edamame) until itโ€˜s crispy and golden.
  • By this time, your pasta should be cooked. Drain it and return it back to the pan.
  • Pour the green sauce over the cooked pasta. Mix well to ensure every piece of pasta is coated in the sauce.
  • Add the sautรฉed protein to the pan and stir everything together.
  • Season with salt and pepper to taste.
