Ingredients
- 2 cups whole grain pasta
- 2 cups fresh spinach
- 1 cup fresh basil
- 2 cloves garlic
- 1/2 cup cashews
- 2 tbsp nutritional yeast
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 can chickpeas
Instructions
- Cook the whole grain pasta according to package instructions. Make sure not to overcook it, as we want it al dente.
- While the pasta is cooking, letโs prepare the green sauce. In a blender, add the fresh spinach, basil, garlic, cashews, nutritional yeast, and olive oil.
- Blend these ingredients until smooth. You might need to scrape down the sides of the blender a few times to ensure everything gets blended properly.
- Now, letโs prepare the protein. In a pan, sautรฉ your chosen protein source (like chickpeas or edamame) until itโs crispy and golden.
- By this time, your pasta should be cooked. Drain it and return it back to the pan.
- Pour the green sauce over the cooked pasta. Mix well to ensure every piece of pasta is coated in the sauce.
- Add the sautรฉed protein to the pan and stir everything together.
- Season with salt and pepper to taste.
