  • 1/2 cup vegetable oil
  • 1 tbsp vanilla extract
  • A handful of chopped walnuts (optional)
  • Butter and flour for greasing the pan, or baking paper

Instructions
 

  • Begin by preheating your oven to 350ยฐF (175ยฐC). This ensures the oven reaches the right temperature by the time you're ready to bake. Grease a brownie pan (about 9×9 inches) with butter and lightly dust it with flour to prevent sticking. Alternatively, you can line it with baking paper for easy removal of the brownies after baking.
  • In a large bowl, sift together 2 cups of flour, 2 tablespoons of cacao powder, 1 teaspoon of baking powder, and 2 tablespoons of Lion's Mane mushroom powder. Sifting helps to aerate the flour and remove any lumps, resulting in a lighter brownie texture. To the dry mix, add 1 cup of brown sugar, 1 large egg, 1 cup of plant-based milk, 1/2 cup of oil, and 1 tablespoon of vanilla extract.
