Chicken Marinade

- 2 tbsp olive oil
- 1 tbsp red pepper powder
- Salt and pepper, to taste
Cooking and Sauce
- 2 tbsp olive oil
- 1 large red onion sliced
- 2 cloves garlic sliced
- 1 tbsp Italian seasoning
- 1 tbsp tomato paste
- 1/4 cup red wine
- 1 can tomatoes sauce
- 2 cups water
- Salt and pepper, to taste
- 1 cup cherry tomatoes halved
- 2 cups fresh spinach leaves
- 8 mini mozzarella balls
- Fresh basil leaves, for garnish
- 1 cup pasta of your choice
Instructions
- Combine the diced chicken with olive oil, red pepper powder, salt, and pepper in a bowl. Mix well and set aside.
- Heat 2 tbsp olive oil in a pot over medium heat. Fry the marinated chicken until golden brown on each side, about 3 minutes per side or until fully cooked. Remove and set aside.
- In the same pot, add more oil if needed and sautรฉ the sliced red onion until softened. Add sliced garlic, Italian seasoning, and tomato paste. Stir until fragrant.
