You need to just Preheat the oven to 200 C and place raw cashews on a baking sheet. Spread evenly in one layer and toast for 10โ15 minutes, or until lightly golden. Let cashews cool down.
Place slightly cooled cashews in the bowl of a food processor and mix for about 10 minutes, scraping down the sides of the bowl periodically if necessary. Once your cashews have turned into a slightly creamy consistency, with the motor running, add 2 tsp of coconut oil, optional you can add vanilla extract and process the cashew butter for another 5 minutes, or until desired consistency. Transfer cashew butter into jar with lid and store in fridge.

How to make Cashew Butter Cups
Melt your dark chocolate in double boiler or in microwave.
Once the chocolate mixture is stirred and melted, line a 12 cup muffin tin with paper muffin liners. Pour 2 teaspoons of chocolate mixture in the bottom of each muffin liner. Once you are done filling each liner, tap the pan down a few times to get the chocolate to sit flat.
Place muffin tin in freezer for 10โ15 minutes, or until chocolate is set
Remove muffin tin from freezer and place distribute the cashew butter mixture on top of each layer of chocolate, flattening it down in the center
Drizzle the remaining chocolate mixture over the tops of each muffin cup, making sure to cover the cashew butter completely.
Top all cup with sliced cashew nuts and place muffin tin in freezer for 10โ15 minutes, or until chocolate is set
