Ingredients Chocolate Apricot Mini Cakes
Oats โ I like to use normal oats and then in a food processor make a flour from it. Oats are so great to use in baking and any treats, plus they have a lot of health benefits for us.
Flour โ This is up to you what kind of flour you use. I use the one what I have by hand, for instance a gluten-free flour or whole grain are great choice.
Coconut oil โ Coconut oil combine all ingredients good together, it’s up to you if you use coconut or olive oil.
Maple syrup โ I like to use by baking a maple syrup but be free to use your favorite sweetener.
Baking powder / Vanilla extract/ Egg โ This three ingredients are the holy ones for baking. If you are not eating eggs, there are a many other ways how you can swap this ingredient.
Apricot jam โ Apricot jam is so tasty, you can make your own jam, or I like to buy bio jam.
Plant based milk โ use any plant based milk you like to. This time I used oat milk.
Chocolate โ If you like, you can use melted chocolate or chocolate powder. I like to use melted chocolate in this recipe because it makes creamy chocolaty consistence of this small cakes.
How to make Chocolate Apricot Mini Cakes
Preheat oven at 180 ยฐ C. Melted your chocolate in double boiler or in microwave.
In food processor, add oats and mix them well till you get flour consistence. Then add flour, coconut oil, maple syrup, baking powder, Vanilla extract, Apricot jam, Egg, plant based milk, melted chocolate and mix all ingredients till it good combine.
Use your favorite form. I used Nordic baking cake farm. First spray your form with oil, then add one to two spoons of texture in each form. Sprinkle on top extra chocolate chips.
Baked 15 minutes at 180 ยฐ C. If you have some melted chocolate left, you can cover your small cakes with chocolate on top.

- 200 gram dark Chocolate
