For the best start into New Year is nice to have on the hand easy healthy recipes what we can include in our diet. My favorite recipe is for example Fresh Spring rolls with Spicy Miso dip on the side. They are easy to make and perfect for Lunch, appetizer or snacks.
Ingredients for Fresh Spring Rolls
- Rice paper
- Zucchini
- Cucumber
- Bok Choy
- Red pepper
- Carrots
- Spring onion
- Avocado
Spicy Miso Dip for Fresh Spring Rolls
- Miso paste
- Soy sauce
- Chili
- Tahini
Fresh Spring Rolls are just like an art you can create your own variation that make you happy. All you need is rice paper and colorful vegetables to make it fresh, tasty and full of vitamins. All ingredients are raw, without cooking.
Rice paper โ they are great healthy option, all you need to do is soaked it in warm water, after they start to soften, and you can easier roll them. I like rice paper because you don’t need to fry your spring rolls and use extra oil intake in your meal.
Zucchini โ they are perfect for spring rolls, you can cut them easily plus they have a lot of benefits for our body. For example, they are loaded with vitamin C, they can help us lose weight and far moreโฆ
Cucumber โ they make this spring rolls taste fresh, you can just wash it first and then cut in your favorite shape
Bok Choy – if you can’t buy Bock Choy, you can use normal green salad, spinach, kale or cabbage.
Red pepper โ I used red pepper but feel free to use one you like, yellow or green. For example, you can combine color with the rest of your vegetables.
Carrots – you don’t need to cooked your carrots, just wash and cut them in desiring form. They will make this light crunch in spring rolls.
Spring onion โ Spring rolls without spring opinion is impossible ๐
Avocado โ avocado is optional, I like to add more superfood in my spring rolls, but they taste just fine without avocado too.

Ingredients
- ยฝ package Rice paper
- 1 piece Zucchini
- 1 piece Cucumber
- 1 piece Bok Choy
- 1 piece Red pepper
- 3 pieces Carrots
- 2 pieces Spring onion
- 1 piece Avocado
MISO CHILI DIP
- ยฝ tbsp Miso paste
- 1 cup Soy sauce
- ยฝ tbsp Chili flakes
- 1 tbsp Tahini sauce
Instructions
- In large pot bring water to boil than let sit on the side
- Wash vegetables and cut in small pieceย
- Place one rice paper in hot water and let sit till edges soften, then lay down on plate and start in the middle of rice paper putting one piece ofย Avocado, Carrot, Red pepper, Zucchini, Cucumber, Bok Choy, Spring onion. Then side edges of rice paper put in middle and roll your spring rolls.
- Repeat this process with all rice paper.ย
