Glazed Oven Roasted Carrots
This recipe of Vegan Glazed Oven Roasted Carrots is just so tasty and so easy to make. Carrots are baked in oven cover with sweet glaze made from olive oil, rice syrup and seasoning. This recipe is a perfect as a side dish or great appetizer.

Ingredients for Glazed Oven Roasted Carrots
Carrots – You can use any carrots you like. I used for this recipe 3 beautiful colors red, yellow and purple however you do you. Also, last time I saw using a mini carrots what is an amazing idea, just keep in mind that by small carrots the time in oven will definitely change.
Olive oil – Olive oil make is this recipe mediterranean touch. However, if you like you can also swap it for coconut, sunflower oil.
Rice syrup – I made my vegan version that why I used rice syrup, you can also try it with brown sugar or dates syrup.
Seasoning – In my opinion, seasoning is every time personal. I kept it simple and used just Salt & Pepper, but you can be creative and add some dry thyme or oregano.
How to make Glazed Oven Roasted Carrots
Preheat oven at 200C.Wash really good your carrots from dirt. In a small bowl, combine olive oil with rice syrup, salt and pepper. Spread the mixture over all carrot sand let it baked at 180C for 15 minutes then toss them and roast 10 more minutes until soften and caramelized.
Top carrots with some parsley and the glaze.

If somehow you donโt eat all your carrots at once, you can still store them in an airtight container in the refrigerator three to four days.
