This Vegan Creamy Kale Pasta is so yummy and full of flavor. Al dente cooked Paccheri Pasta with creamy coconut sauce and packed with kale is just a perfect combination. This recipe is perfect to make for dinner or lunchtime.

Ingredients for Creamy Kale Pasta

Pasta – I used Paccheri Pasta for this recipe. This pasta was the perfect match with the combination of creamy coconut sauce, however you can be free and use any pasta type you like. If you are gluten-free also, you can use gluten-free spinach or lentil pasta.

Kale – I love this vegetable, I know that normally they are people who prefer spinach to kale, but I love both and honestly kale is so versatile. Normally I buy 5 kg and eat it in a month, I make my salads, smoothies, juices, or soups and this tasty pasta recipe is definitely a winner!

Creamy Kale Pasta

Dry tomato – This is optional, if you donโ€˜t have dry tomato you can skip it. However, it brings special flavor to the dish and I prefer to make it with them.

Coconut milk – Hallelujah for coconut milk. I mean, everyone who love plant based recipe, I think agree, that coconut milk is the best. It brings this topical coconut flavor and in the same time make all the dishes creamy and satisfying. If you donโ€˜t have coconut milk, you can swap it for soy cream.

Seasoning and Herbs – For this recipe, I used salt Pepper and cilantro. Before I hate cilantro, then I try to add it in my smoothies and I find the taste so great that nowadays I am using it almost every day in my kitchen.

How to make Creamy Kale Pasta

In a sauce pan, heat salted water and cooked pasta as the direction on the package.
In a pan add oil wait until is hot then sautรฉ onion until is soft but donโ€˜t get brown color, add sliced garlic and let it cooked one more minutes, add sliced kale, chopped dry tomatoes, pour over coconut milk and add 1/2 of cup from pasta water. Season with salt pepper, seasoning mix and on the end add chopped cilantro. Bring everything to boil, then turn the heat on medium and let slowly cooked for 10 to 14 minutes. When the pasta is Al dente, add it to the pan and let it cooked two more minutes.
Optional, you can top it with some nuts

  • 2 cups Pasta Paccheri
  • 1 tbsp Olive oil
  • 1 Onion
  • 1 clove Garlic
  • 1 cup Kale
  • 1/2 cup Dry tomato
  • 1 can Coconut milk
  • 1/2 cup cilantro
  • Salt & Pepper

Optional

  • 1 tbsp Mix seasoning
  • 1 tbsp nuts

Notes

Tip:
Normally, curly kale has a steam that runs in the middle down, and itโ€˜s easy to remove it with the knife. The first is to lay the leaf flat on a cutting board, then cut along the sides of the stem to remove the tender leaves.
