Ingredients
  

  • 1 bock Tofu sliced
  • 2 tbsp Tapioca powder
  • 1 medium Red onion sliced
  • 1 cup Broccoli cut into florets
  • 1 Bok choy chopped
  • 2 tbsp Soy sauce
  • 2 tbsp Tamari sauce
  • 1 tbsp Apricot jam
  • 1 clove Garlic
  • 1/4 cup Water
  • 1 cup Rice

Instructions
 

  • Lightly coat the sliced tofu with 1 tablespoon of tapioca powder.In a pan over medium heat, grill the tofu slices until golden brown, about 5 minutes.

  • In the same pan, add the sliced red onion, broccoli, and bok choy. Sautรฉ for about 5 minutes until the vegetables are tender but still crisp.
  • In a small jar, combine 2 tablespoons soy sauce, 2 tablespoons tamari sauce, 1 tablespoon apricot jam, the sliced garlic, 1/4 cup of water, and 1 tablespoon of tapioca powder. Close the jar and shake well to mix.

  • Pour the sauce over the tofu and vegetables.Stir well to coat everything in the sauce. Let it simmer for about 5 minutes until the sauce has thickened slightly.

  • Prepare the rice according to package instructions.Serve the tofu and vegetable mixture over a bed of rice.
