How to make Stuffed Sweet Potatoes

Preheat oven at 200 C. Using a fork, poke small holes in sweet potatoes going all the way around. Line a baking tray with parchment paper. Bake for 50 to 60 minutes, or until fork tender.

Stuffed Sweet Potatoes

In a bowl, add chickpeas and press them lightly with a fork. Add sliced onion, red and yellow pepper, scallions, smoked tofu. Season with salt & Pepper and pour over olive oil. Mix until all ingredients combine. After sweet potatoes are cooked by carefully with knife sliced length. Add chickpeas mixture in the middle. Top with cilantro and extra onion. Enjoy!

Ingredients
  

  • 2 large Sweet potatoes
  • 1 can Chickpeas
  • 1 large Onion
  • 1 Red pepper
  • 1 Yellow pepper
  • 1/2 cup Scallions
  • 250 gram Smoked tofu
  • 2 tbsp Olive oil
  • Cilantro
