Valentine’s Day is a day when we can spread love and give attention to our loved ones with some dedicates food and enjoy the time together. I share my favorite and easy Valentine’s Day recipes.

After New Year Eve is the February behind the door and people start to spread the love. 14 February is time to exchange chocolate, jewelry and our attention to our loved ones.

Personally, I am not too crazy about this day and I think we should give take care about our loved ones any time of the year.

Weekends are for my great example. At the morning every weekend I prepare a nice breakfast for my boyfriend and at dinner time I love to have my friends over, and I am happy to cook some dinner and enjoy time with a glass of wine.
With food, we can the most show our love and have a great time.
That’s why here are some great recipes to try this Valentine’s Day.

Valentine’s Day Breakfast

Breakfast is the perfect time to start the day. If we  have a great food with some quite time, the day will flow. This day of love, is a great way to have lovely homemade pancakes.
Pancakes we can make with a lot of different option. We can make a fruit topping and pour over some maple syrup, seeds or nuts.

Vegan Pancakes option:

One time when I was making a pancake and I spoke on phone with my sister. Somehow, we had a long conversation.
I place pancakes in the oven, start cleaning the kitchen and suddenly saw 2 eggs for me. I totally forget to put it in the dough.
Well, because the pancakes were already in the oven, I start laughing and just say: โ€ž Well we will see how they’re going to taste without eggs?”
This mistake was great, pancakes were dedicates and I loved the way without the eggs as well. What can we learn from this sorry:
We are not perfect and if we make a mistake maybe it’s going to be a blessing.

Pancakes Inspiration hunters

What you need for pancakes:

Flour – I used gluten-free flour for this recipe, but be free to choose your favorite. For example chickpea flour, almond flour, whole grain flour, white flour are great option.

Milk – use any plant-based milk, what you have at home. My all-time favorite is oat milk.

Egg – use two rage or bio eggs, if you prefer to make vegan option you can swap the eggs for vegan egg powder or flax seeds egg replacement

Maple syrup – I mean, maple syrup is a must-have if you are eating pancakes. I know that we should be careful about our sugar intake, but if you eat it ones in a while. You have a permission to enjoy your sweet time with lovely pancakes.

Ingredients
  

  • 1 cup flourof your choice
  • 1/2 cup plant-based milk
  • 2 tbsp baking powder
  • 1/2 cup brown sugar

Optional

  • 1/2 tbsp vanillaextract

Instructions
 

  • Place all ingredients in your blender, and mix till allcombine and make a ticker dough
  • Heat your pan with a 1 tbsp coconut oil (if you have nosticking pan, you don't need to use any oil)
  • Pour a small amount of dough on the pan making a small ringsand let it fry, when the underside is golden and bubblesbegin to appear on the surface, flip pancakes with a spatula and cook untilgolden.ย 
  • Serve immediately with maple syrup andfruit on top.

Zucchini fires with wild salmon, it’s so dedicates and tasty. Everyone will fall a love in this easy recipes. 

Aromatic wild salmon with crunchy zucchini fries is my got to for a nice romantic dinner time.

Ingredients for zucchini fires

Zucchini – zucchini are so healthy and provides us with vitamin C, prevent diseases, they are great for nervous system, good to lose weight, help our eyes, they have great anti-oxidant. 

These fries are a healthy and gluten-free option. If you like, you can use potatoes or sweet potatoes instead.

Almond flour – almond have a great benefits for our health like helping to increase brain function, boost bone and teeth healthy, help ion weight loss, strength immune system, and they are great for skin and hair.

Sweet pepper powder – to make this zucchini fries nice gold brown, use 2 tbsp sweet pepper powder or 1 tbsp cayenne pepper

Eggs – use 1 to 2 bio eggs, if you are looking to make it vegan option use 3 tbsp vegan mayo instead.

Ingredients
  

Zucchini fries

  • 2 medium zucchini
  • 200 gram almond flour
  • 2 tbsp sweet pepper powder
  • 2 medium eggs
  • Salt & pepper

Wild Salome

  • 2 medium Salmon
  • 1 tbsp soy sauce
  • 1 tbsp hoi soy sauce
  • 1 tbsp sweet pepper powder
  • Salt and pepper

Instructions
 

Zucchini fries

  • Preheat oven at 200ยฐC.
  • Cut zucchini in nice long fries rectangles. In one bowl add eggs with salt & pepper, in the next bowl add almond flour with sweet pepper powder.ย 
  • Working in batches, dip zucchini into the eggs then dredge in an almond flour mixture and place on a baking sheet than sprinkle with little olive oil.
  • Place in oven and baked for 20 minutes.ย 

Wild Salome

  • Meanwhile, mix all ingredients for salmon in one small bowl.ย  Spread it over the salmon and place on the other baking sheet and let baked for 15 minutes or till the top of the salmon is gold but inside is still light rose.
  • Serve immediately with some scallions on top

Notes

Tips: for dip is great, mix mayo with Greek yogurt and scallions, but be free to use your favorite one.

Chickpea flour – is a great gluten-free option. This flour may help us reduces cholesterol, support heart health, reduces Inflammation, prevent cancer and help in weight loss.

Brown sugar – brown sugar is a great option if you prefer the other sugar substitute, you can use Erythrit or honey as well.

Vanilla extract – vanilla extract give this brownie a nice sweet note and smell as a vanilla. If you desire, you can use orange or nuts aroma instead.

Ingredients
  

  • 2 can black beans
  • 1 cup Chickpeaflour
  • 1/2 cup raw cacao powder
  • 1 cup brown sugar
  • 2 tbsp coconut oil
  • 2 tbsp plant-based milk
  • 2 tbsp backing powder
  • 1 tbsp Vanilla extract
  • Pinch of sea salt

Extra

  • 1 cup Chocolate chips
  • 1 cup Peanuts

Instructions
 

  • Rinse black beans under cold water, then add all ingredientsfor dough in the food processor. Mix really well till everything combine,around 5 minutes or more.
  • On backing form place baking paper and pour over the doughthenย sprinkles some chocolate chips withย sliced peanut nuts.
  • Baked around 40 to 45 minutes. Till brownies are cookedtrough.
  • Let brownie a Little cooler than can you easier sliced it.
