Ingredients for Asparagus and Mango Salad
Asparagus โ You can use white or green asparagus. I used a green one, which you don’t need to peel, only cut the ends. White one you need to peel first and then cooked the same as a green one.
Mango โ Mango is great to add in any salads, I love the fresh taste and beautiful golden-yellow color.
Bulgur โ use bulgur, quinoa or couscous.
Red onion & Tofu โ Red onion and tofu add is great for adding extra protein
Tomato โ use any tomatoes to make this salad extra fancy
Jalapeรฑos โ for extra hot kick, use a bit of jalapeรฑos
How to make Asparagus and Mango Salad
Perep your veggies. Cooked bulgur in hot. In boiling water add asparagus, lower heat to low and let cooked around 10 minutes.
Meanwhile, in hot pan add olive oil, sliced tofu with red onion, soy sauce and let simmer for 10 minutes.
On your plate add asparagus, tofu, tomato, bulgur jalapeรฑos and mango. Sprinkle some extra olive oil on top and season with salt and pepper.

- 1 cup Asparagus
- 1 medium Mango
- 1/2 cup Bulgur
- 1 medium Red onion
- 1 cup Tofu
- 3 medium Tomatoes
- 2 small Jalapeรฑos
- 1 tbsp Soy sauce
- 1 tbsp Olive oil
- Salt and Pepper
Instructions
- Perep your veggies. Sliced onion, tofu, tomatoes, jalapeรฑos and mango in squares.
- Cooked bulgur in hot water around 10 minutes, then set a side.
- In boiling water add asparagus, lower heat to low and let cooked around 10ย minutes.
- Meanwhile, in hot pan add olive oil, sliced tofu with red onion, soy sauce and let simmer for 10 minutes.
- On your plate add asparagus, tofu, tomato, bulgur jalapeรฑos and mango. Sprinkle some extra olive oil on top and season with salt and pepper.
