Ingredients
- 2 tbsp Sesame oil
- 2 medium Red onions sliced
- 1 medium Red bell pepper sliced
- 1 medium Yellow bell pepper sliced
- 1 Leek sliced
- 1 cup Mushrooms sliced
- 1 Bok choy chopped
- 3 tbsp Soy sauce
- 2 tbsp Oyster sauce
- 1 tbsp Chili sauce
- 1 cup Chicken breast
- 2 cans Coconut milk
- 4 cups Chicken stock
Optional
- 1 cup Noodles
- Cilantro or parsley for garnish
Instructions
- In a large pot, heat the sesame oil over medium heat. Add the sliced red onion, red and yellow bell peppers, leek, and mushrooms to the pot. Sautรฉ for about 5 minutes until they start to soften.
- Stir in the chopped bok choy, soy sauce, oyster sauce, and chili sauce. Mix well. Add the thinly sliced chicken breast to the pot. Pour in the coconut milk and chicken stock. Increase the heat and bring the mixture to a boil.
- Once boiling, reduce the heat to medium and let the soup simmer for about 15 minutes, or until the chicken is fully cooked.
- If using noodles, cook them according to the package instructions in a separate pot.
- If using noodles, place a portion of cooked noodles in each bowl. Ladle the hot soup over the noodles.Garnish with chopped cilantro or parsley.
