They are common to use as a supplement in powder form, however today I want to show you how you can cook them and enjoy in a soup.

How to make Lion’s mane mushroom soup
First cooked your noodle in extra pot in salt water, after the cooked time set it on the side. Garlic and ginger peel and sliced in small. Tofu and Lion’s mane mushroom sliced in squares.
In wok, heat olive oil. Add scallions, garlic, and ginger and simmer around 5 minutes. Then add tofu, Lion’s mane mushroom and let it simmer 5 more minutes. Season with salt & pepper, add one tbs soy sauce, hoisin sauce pour over a water and bring everything to boil. Then turn heat to medium.
To keep all great health benefits from miso paste, pour one spoon of soup in small bowl with one tbsp of miso paste and wish slightly until miso combine with the soup. Then pour back in to the wok and simmer a bit. In a small bowl add cooked noodle, your Lion’s mane mushroom soup and top with cilantro and scallions.
