- 4 cups lettuce of your choice, chopped
- 2 cupsq bok choy sliced
- 1 cucumber sliced
- 1 cup bulgur cooked
- 1/4 can corn drained
- 3 scallions sliced
- 1/4 cup cilantro chooped
- 1/4 cup nuts chooped
- 1/4 cup Parmesan cheese grated
Dressing
- 1/4 cup olive oil
- 1 tbsp Italian seasoning mix
- Salt & Pepper
