Ingredients
  

  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion sliced
  • 1 head garlic
  • 2 tbsp Olive oil
  • Bagels (as many as you need)

Optional toppings

  • Prosciutto or your choice of ham
  • Tomato slices
  • Spinach leaves

Instructions
 

For the Veggie Dip

  • Preheat your oven to around 400ยฐF (200ยฐC). Take your red pepper, zucchini, and red onion, and slice them up. Lay them out on a baking sheet.
  • Grab your head of garlic, and cut it in half across the cloves. Take a piece of aluminum foil, place the garlic halves cut-side up, drizzle with olive oil, and then wrap it up to form a little foil packet. Pop this on the baking sheet with the veggies.
  • Slide everything into the oven and bake for about 40-50 minutes. You want everything soft and slightly caramelized.
  • Once everythingโ€™s baked and cool enough to handle, squeeze the garlic cloves out of their skins โ€“ youโ€™re looking for just the soft insides. Toss the garlic, roasted veggies, a pinch of salt, and some pepper into a blender. Whiz it up until smooth. Taste and adjust the seasoning if needed.

For the Bagel

  • Cut your bagel in half. Optional, but highly recommended โ€“ grill or toast these halves until theyโ€™re nicely browned and crispy. Gives a great texture contrast.
  • Spread a generous layer of your homemade veggie dip on the toasted bagel halves. Add a slice or two of prosciutto (or whatever topping you fancy), some tomato slices, and a few leaves of spinach.
