How to make Veggie Lo Mein

Prep your veggies: Sliced onion, mushroom, bok choy, red pepper and scallions in small. Shake all the sauce ingredients together in a jar.
Cook the noodles according to package directions. Drain and set aside.
Heat the sesame oil in a large wok. Add the red onion, simmer for 2 minutes then add vegetables (mushrooms, red pepper) simmer stir-fry around 5 minutes. Add the sauce and bring everything to boil, then turn heat on medium and let cooked around 8โ€“10 minutes. 2 minutes before the end time, add some chopped bok choy.
Serve topped with scallions

Ingredients
  

  • 250 g ramen noodles
  • 1 tbsp sesame oil
  • 2 medium red onions
  • 2-3 cups chopped vegetables like mushrooms, red peppers, bok choy or broccoli
  • 1/2 cup Scallions

SAUCE

  • 300 ml water
  • 2 tbsp dark soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice syrup
  • ginger
  • 1 clove garlic
  • 1/2 Lime
  • 2 tbsp tapioca

Instructions

Notes

Tip: If you would like to add some extra color to the noodle, I like to add one tbsp turmeric into the noodle water to make them more colorful.
