Ingredients for Zero-waste Purple potatoes soup
Purple potato – Purple potatoes are here the main ingredients, but you can enjoy this soup also with normal potatoes.
Purple carrots – I used purple carrots to make this soup extra purple, but be free to use any carrots you like
Onion – Onion is for my just a perfect ingredient to start any soup. I mean, there is nothing better than to simmer onion first and then make soup of your choice.
Garlic – I like to use garlic in this soup because it makes a perfect flavor into it.
How to make Zero-waste Purple potatoes soup
Potato Skin Chips
Wash really well and peel potatoes with carrots.
Preheat the oven to 200ยบC. Line a large baking sheet with baking paper.
Potatoes and carrots peels add to the baking sheet season with salt and red pepper powder, pour over olive oil and mix well then spread out evenly onto prepare baking sheet. Roast for 15 minutes.
Potato soup
In a pot heat oil then add sliced onion simmer until onion soften, then add sliced garlic and simmer one more minutes. Add sliced potatoes, with carrots, pour over water and season with salt, pepper oregano and turmeric. Bring everything to boil then turn heat on low and cooked for 15 to 20 minutes, until potatoes are cooked.
Use your blender or hand mixer and blend your soup to creamy consistence. Top with Potato Skin Chips

Onion and garlic skin
You can use onion and garlic skin for homemade powder. Just add all skin into the food processor and blend until you get powder, then place into the Mason jar. Enjoy!
