Ingredients
  

  • 2 medium sweet potatoes sliced into small squares
  • 200 g halloumi cheese sliced
  • 1/4 cup nuts (such as almonds, walnuts, or pecans)
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp Chili flakes optional
  • 1 cup cooked lentils
  • 1 can chickpeas
  • 1 can corn
  • Greens of your choice (lettuce, spinach, kale, etc.)

Instructions
 

  • Preheat your oven to 200ยฐC (400ยฐF).On a baking sheet, arrange the sliced sweet potatoes, halloumi cheese, and mixed nuts.Drizzle olive oil and maple syrup over the sweet potatoes, halloumi, and nuts. Season with salt, pepper, and chili flakes if desired. Toss everything to coat evenly.
  • Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized, and the halloumi is golden brown.
  • While the sweet potatoes and halloumi are baking, prepare your bowl ingredients. In a large bowl, combine the cooked lentils, chickpeas, corn, and greens of your choice.
  • Once the sweet potatoes and halloumi are done, remove them from the oven and add them to the bowl with the other ingredients.
